Rosemary Peppercorn Crusted Prime Rib

Ingredients:

  • 5lbs Boneless Prime Rib roast
  • 2 tbsp Kosher Salt
  • 2 tbsp ground peppercorns
  • 3 tbsp Rosemary (finely chopped)
  • 1 tbsp Olive oil

Steps:

  1. Preheat oven to 425 degrees.
  2. Mix all ingredients and rub the entire roast.
  3. Put the roast uncovered for 25 minutes uncovered to develop a crust.
  4. Turn the temperature down to 325 degrees for an hour and a half.
  5. Check the internal temperature every 30 minutes until it has reached 130 degrees.
  6. Remove from the oven and tent with tinfoil, allowing the meat to rest for 20 minutes.
  7. Slice and serve
