Ingredients:

  • 1 lb Benchmark Lean ground beef
  • 3 cups diced potatoes
  • 1/2 cup diced celery
  • 1/2 cup grated carrots
  • 1 small onion diced
  • 1 1/2 cup milk
  • Beef broth
  • 1/2 lb Velveeta cheese
  • Salt & Pepper

Steps:

  1. In a large pot, add 1 tsp oil and add the diced onion, sweating for 3-4 minutes on medium heat.
  2. Add the ground beef and break it up into small pieces as the meat browns.
  3. When the ground beef is fully cooked, add the vegetables, covering with broth.
  4. Simmer 15-20 minutes until the vegetables are tender.
  5. Add milk and cheese, stirring until it is melted.
  6. Serve and enjoy
