Ingredients:
- 1 lb Benchmark Lean ground beef
- 3 cups diced potatoes
- 1/2 cup diced celery
- 1/2 cup grated carrots
- 1 small onion diced
- 1 1/2 cup milk
- Beef broth
- 1/2 lb Velveeta cheese
- Salt & Pepper
Steps:
- In a large pot, add 1 tsp oil and add the diced onion, sweating for 3-4 minutes on medium heat.
- Add the ground beef and break it up into small pieces as the meat browns.
- When the ground beef is fully cooked, add the vegetables, covering with broth.
- Simmer 15-20 minutes until the vegetables are tender.
- Add milk and cheese, stirring until it is melted.
