Ingredients:

  • 1/2lb Benchmark lean ground beef
  • 1 medium onion- diced
  • 28 oz can diced tomato
  • 2 cartons beef broth
  • can tomato soup
  • 1 cup frozen corn
  • 4 carrots- diced
  • 3 celery stalks- diced
  • 1 bay leaf
  • 1/2 tsp thyme
  • 1/2 cup Pot Barley
  • Salt & Pepper

Steps:

1. Add 1 tsp of oil in a large pot and add the diced onion, sweating for 3-4 minutes on medium heat.
2. Add ground beef and break it up into small pieces as the meat browns.
3. When the ground beef is fully cooked, add all the other ingredients, simmering for at least 2 hours.
4. Season before serving with salt & pepper.
5. Serve and enjoy
