Ingredients:

  • 1 20 ounce pkg shredded hashbrowns (if frozen, need to thaw and squeeze out excess moisture)
  • 3 eggs
  • ¼ cup milk
  • 1 cup shredded cheese
  • ¼ fresh chopped chives
  • 1 pkg hollandaise sauce
  • 2 -4 tbsp bbq sauce (favourite brand)
  • Pkg Benchmark beef bacon
  • 4 eggs
  • 2 cups cherry tomatoes
  • 2 tbsp balsamic vinegar 

Steps:

  1. Preheat the oven to 400F. On a lined baking sheet, drizzle tomatoes with oil and season with salt & pepper. Roast for 6-7 minutes until tender. When roasted, toss with the balsamic vinegar and set aside.
  2. On the cookie sheet, layout stripes of bacon and bake for 15 minutes at 400F.
  3. In a small pot, follow the instructions on the package for the hollandaise sauce. When finished, stir in bbq sauce.
  4. Heat the waffle iron to medium-high heat. Combine hash browns, eggs, milk, shredded cheese, chopped chives, seasoning with salt & pepper. Spray waffle iron with non-stick spray. Add a thin layer of the mixture to the iron and cook for 5- 8 minutes.
  5. Prepare eggs as desired, poached, scrambled.. etc.
  6. To assemble, start with waffles, beef bacon, eggs, hollandaise sauce & roasted tomatoes. 
  7. Serve and enjoy
