Ingredients:
- 1 20 ounce pkg shredded hashbrowns (if frozen, need to thaw and squeeze out excess moisture)
- 3 eggs
- ¼ cup milk
- 1 cup shredded cheese
- ¼ fresh chopped chives
- 1 pkg hollandaise sauce
- 2 -4 tbsp bbq sauce (favourite brand)
- Pkg Benchmark beef bacon
- 4 eggs
- 2 cups cherry tomatoes
- 2 tbsp balsamic vinegar
Steps:
- Preheat the oven to 400F. On a lined baking sheet, drizzle tomatoes with oil and season with salt & pepper. Roast for 6-7 minutes until tender. When roasted, toss with the balsamic vinegar and set aside.
- On the cookie sheet, layout stripes of bacon and bake for 15 minutes at 400F.
- In a small pot, follow the instructions on the package for the hollandaise sauce. When finished, stir in bbq sauce.
- Heat the waffle iron to medium-high heat. Combine hash browns, eggs, milk, shredded cheese, chopped chives, seasoning with salt & pepper. Spray waffle iron with non-stick spray. Add a thin layer of the mixture to the iron and cook for 5- 8 minutes.
- Prepare eggs as desired, poached, scrambled.. etc.
- To assemble, start with waffles, beef bacon, eggs, hollandaise sauce & roasted tomatoes.
- Serve and enjoy
